Mind the Gaps Diet
1 O God, our help in ages past,
Our hope for years to come,
Our shelter from the stormy blast,
And our eternal home.

Thy saints have dwelt secure;
Sufficient is Thine arm alone,
And our defence is sure.

I think we all need reminding from time to time, and what better time than the beginning of a new year, that although we strive to nourish our bodies and improve our health, ultimately the number of our days is not in our control. Many these days make health their religion. They think 'If I can only make myself super healthy I can escape serious illness and prolong my days.' We are all prone to thinking in this way. But it is utter foolishness! It presumes that we are in control of our destiny and ignores God, which is very dangerous.
If we know the Lord Jesus as our Saviour, that He died on Calvary in our place, as a punishment for our sin, then our future is totally secure, and what a comfort that is. When we die, we will go to spend eternity with Him in Heaven. Before that time, we have the comfort of knowing that whatever happens to us this year, nothing is an accident, or a mistake. Our future is thankfully controlled by our Saviour and not us, or else what a mess we would make of it. Sure, there will be testing times, we are promised that in God's Word, the Bible. Sure there will be hard times, when we are not sure what is going on. But these are times to grasp Him more firmly by the hand, for our faith to grow and for us to prove that He is indeed our HELP, our REFUGE and our SALVATION. Our Heavenly Father brings such things out of HIs great love for us, like a parent disciplines his/her child.
If you do not know the Lord, then sadly I cannot offer you these wonderful promises. I can only urge you to make 2017 the year you submit your life into the Hands of your Creator God. No one who has ever done so has ever regretted it.
So let's go forward, endeavouring to look after the earthly vessels of our bodies, offering them as fit tools to do the work of the Lord, but also ready to submit to his plans for us, which might mean ill health, as a means of sanctifying us, remembering that:
....all things work together for good to them that love God, to them who are the called according to his purpose.'
I've been meaning to try making some sort of 'biscuit' for a while now, and today I decided to give it a go.
It had to be ginger - it's a warm comforting winter flavour!
These are not crisp and crunchy, but are definitely more-ish, seeing as I couldn't keep the Sons from trying to nab yet another one. They are not sweet, so hopefully will suit my diabetic readers, but the ginger and cinnamon make up for it.
1/2 cup nuts - I used mixed nuts
1/4 cup coconut flour
1/4 cup milled chia seed. I bought mine already milled, but you can whizz it in the food processor or in a smoothie maker/coffee grinder.
1 oz butter
1 egg, on the smallish side
2 oz dried fruit - either dates/raisins I used raisins
1/2 tsp ground ginger
1/4 tsp cinnamon
1/2 tsp bicarbonate of soda
Place the nuts in a food processor and blitz until finely ground.
Add the chia seed and coconut flour.
Add the butter and whizz until combined.
Add the egg and mix again.
Add in all the other ingredients.
Whizz until it sticks together in a big ball of dough.
Cut 2 large rectangles of greaseproof paper. Put the dough on one and place other on top. Roll it until about 1/4 inch thick.
Remove the upper paper and lift the flattened dough onto a baking tray and then put the tray in the oven.
Bake at Gas 4, 180 C, 160 C.fan, 350 F. for about 18 - 20 minutes, until golden brown.
Slice the cookie into however many you want - small or large - we made little ones.
Leave to cool.
Store in an air tight container, if there are any left.
Where to buy chia seeds: Health food shops, or supermarkets or online here. Supermarkets tend to be very expensive.
